Crustless Quiche (ham + cheese)
Ingredients
- 2 cups cut-up cooked turkey or ham
- 1 jar (4 1/2 ounces) sliced mushrooms, drained
- 1/2 cup sliced green onions
- 1/2 teaspoon salt
- 1 cup shredded natural Swiss cheese
- 1 1/2 cups milk
- 3/4 cup Bisquick baking mix
- 3 eggs
Directions
- Heat oven to 400 degrees.
- Lightly grease pie plate (10 x 1 1/2 inches)
- Sprinkle turkey (or ham), mushrooms, green onions, salt, and cheese in pie plate
- Beat remaining ingredients until smooth, 15 seconds in a blender on high speed or 1 minute with hand beater
- Pour into pie plate
- Bake until golden brown and knife inserted halfway between center and edge comes out clean, 30 to 35 minutes.
- Let stand 5 minutes before cutting.
- Refrigerate any remaining pie.
- Makes 6 to 8 servings.
A little bite about the recipe
Was crustless quiche part of your childhood? There are few meals I can distinctly remember my mom making on rotation when we were little. Pancakes for dinner (what kid doesn’t love that?), goulash (which I hated as a child, but enjoy now), chicken teriyaki, burgers, chicken a la king, and this quiche.
The recipe is from one of my mom’s old cookbooks (I have a terrible iPhone photo below to prove it) and it uses Bisquick instead of a traditional crust (so you can make it gluten-free if you want to snag the gluten-free Bisquick). It’s one of those easy recipes that you end up wanting to add to your meal plan every week because it’s so simple — saving time? Yes please.
They call it “Impossible Turkey Pie”, although my family always made it with ham instead of turkey. I’ve also started experimenting with adding other veggies, meats, and cheeses while keeping the same base recipe. I made a version of this with spinach, feta, and red peppers for a bridal shower and it was delicious!
I serve the quiche with a side of mixed greens tossed in extra virgin olive oil + Trader Joe’s Everything But the Bagel Seasoning. And I swear this crustless quiche is one of the easiest meals that we make. I love it because it’s easy to prep on Sunday, you can throw everything in the pan and have it ready to serve in 45 minutes, it tastes delicious, and we normally have enough for leftovers.
